CHOCOLATE CAKE BITES

For the record, these are ultimately cake pops without the sticks! I didn't have any in my flat and it was too cold outside to go and buy some so I thought I'd just work with what I had and give them a different name. Stick or no stick, these things still taste amaze-balls! (*insert cringe face here*) and are super easy to make with just a few store bought ingredients and left over cake.

I recently made my mum a really nice (if I do say so myself) chocolate cake for her Birthday. The only problem was that I had so much left over cake that I just popped it in a tupperware tub and forgot about it for a few days. I would have felt guilty just throwing the rest of the cake away so I decided instead that I'd buy some ready made icing, chocolate and some sprinkles and make some bite sized snacks!

I could have made everything from scratch for this recipe, but this is just a quick fix for your sugar cravings and I was feeling too lazy to make ficing and remake the cake for this post! So if you have left over cake that you don't know what to do with, then you might like this idea. Plus, they're a nice snack to bring to a Christmas party or just to have lying around at Christmas.

You will need:

Left over chocolate cake
Chocolate fudge icing
Milk/white chocolate
Sprinkles or any decoration of your choice
Food colouring (optional)

Start by crumbling up your chocolate cake in a large bowl. Add the icing to the crumbled up cake and mix until well combined.

Using your hands, take a small amount of the mixture and roll between your palms to make a small bite-sized ball. Place the ball onto a plate. Repeat this until the mixture is all used.

Place the balls into the fridge for an hour or so to chill and firm up.

Melt your chocolate in a heatproof bowl over a pan of hot water (this prevents the chocolate from burning). I added a few drops of red food colouring to my white chocolate to make a nice pink colour. Take your cake balls out of the fridge and individually dip them into the chocolate, completely covering them.

Whilst the chocolate is still wet, decorate the cake bites however you like.

Place back in the fridge to set for 30 minutes and enjoy!
